PUMPKIN SPICE SOUP

Ingredients

1 eating apple
2 garlic cloves
1 large white onion
1 small pumpkin
2 small sweet potatoes
1 tsp olive oil
½ tsp ground all spice
1 tsp pepper
½ tsp ground cinnamon

Method

Chop sweet potato and pumpkin into small cubes. Brush pumpkin and sweet potatoes in a little oil and roast until medium soft.
Add oil to a large pan and fry sliced apple, onion and garlic until golden. Add spices and fry until fragrant.
Add vegetable stock to the pan, with the pumpkin and sweet potatoes and boil until completely soft.
Pour ingredients into a blender and blitz until desired texture.
Toast pumpkin seeds in the oven with a little oil until golden.
Add seasoning to desired taste
Add water/stock to desired taste.
Pour into a bowl and sprinkle sunflower seeds and pumpkin seeds on top. Enjoy!
